Bonus: difference between baking soda and baking powder

The difference between baking soda and baking powder is that baking soda is just sodium bicarbonate while baking powder is sodium bicarbonate, and calcium acid phosphate, sodium aluminum and starch, which gives baking powder leavening capabilities by itself. To answer your second question baking soda works by combining with another acidic ingredient and moisture to produce carbon dioxide bubbles. These bubbles expand making the baking goods rise under heat. Baking powder works by combining with moisture and releasing gases. Double-acting baking powder requires heat to produce most of its gases. You need baking soda when baking stuff like cookies and you would use baking powder to bake biscuits and such for a more neutral taste.
